vegan black-eyed peas
They're delicious.
pound of black-eyed peas, picked over and rinsed
water
salt
onion
five cloves garlic
olive oil
tons of spinach
earth balance
Boil the beans in water, covered. When they're done, take off the lid and boil more until a lot of the water is gone. Put in some salt. Taste.
Saute the onion and garlic in olive oil. Add it to the beans and stir. Saute the spinach till wilted. Add it to the beans and stir.
Simmer everything together for a while. Then dish some up with a pat of earth balance on top and some extra salt if desired. Enjoy.
