curry pumpkin soup

I promised Erik curry pumpkin soup, and it looks like I just accidentally found my recipe on a vegan livejournal community! Yay!

Curry Pumpkin Soup

1/4 c olive oil or butter
1 c chopped onion
1 garlic clove crushed
1 tsp curry powder
1 tsp salt
1/4 tsp ground coriander
1/8 tsp crushed red pepper
3 c vegetable broth
1 3/4 c or 15.5 oz ounce of canned pumpkin
1 c soy creamer
sour cream and chives

In a large sauce pan heat olive oil. Sauté onion and garlic until soft. Add curry, salt, coriander, and red pepper. Cook for 1 minute. Add broth and boil gently uncovered for 15-20 minutes. Stir in pumpkin and half-and-half. Cook 5 minutes. Blend until creamy. Serve warm and garnish with sour cream and chives.
