perfect perfect perfect

vegan sweet potato pecan bread

3 tbs ground flaxseed
1/2 cup water

1 1/2 cups vegan sugar
1/2 cup mashed overripe banana
1/2 cup canola oil
2 cups fresh mashed sweet potato

3 cups white whole wheat flour
1 tsp each cinnamon, fresh nutmeg, and ground ginger
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

1 cup broken up pecans

Mix together the flaxseed and water and let sit five minutes, until thickened.

Preheat the oven to 350 degrees. Scrub five sweet potatoes and prick them with a fork. Microwave until done. Cut them in half and scoop out the flesh. Mash.

Oil two regular 8 inch loaf pans.

Combine flax mixture in a large bowl with sugar, banana, oil, and mashed sweet potato. Dump flour, spices, baking soda, baking powder, and salt on top. Stir the dry ingredients into the wet. 

Fold in the walnuts.  Pour batter into pans. It may be very thick, and that's okay.

Bake the loaves for about 50 minutes--they're done with the inserted knife comes clean. Share freely.
