chewy carob-raspberry cookies

This afternoon I amended a recipe from the Veganomicon, the recipe for chewy chocolate-raspberry cookies (I don't eat chocolate). They turned out perfect--rich, dense, heavy, and bursting with flavors. Something about the almond extract, I think--I would say that's the secret ingredient. They come out nearly black--they look like briquettes.
